Ingredients
For the chicken marinade:
· 4 boneless, skinless chicken breasts
· 1/4 cup lime juice
· 2 tablespoons olive oil
· 2 tablespoons soy sauce
· 2 garlic cloves, minced
· 1 teaspoon chili powder
· 1/2 teaspoon cumin
· 1/2 teaspoon paprika
· Salt and pepper, to taste
For the avocado salsa:
· 2 ripe avocados, diced
· 1 medium tomato, diced
· 1/4 cup red onion, finely chopped
· 1 tablespoon lime juice
· 2 tablespoons fresh cilantro, chopped
· Salt and pepper, to taste
Instructions
o In a bowl or zip-top bag, combine lime juice, olive oil, soy sauce, garlic, chili powder, cumin, paprika, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
o Preheat grill or skillet over medium-high heat. Remove chicken from marinade and grill for 6–7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (74°C).
o While the chicken is cooking, prepare the avocado salsa. In a bowl, combine diced avocado, tomato, red onion, lime juice, cilantro, salt, and pepper. Gently toss to combine.
o Serve the grilled chicken topped with the fresh avocado salsa.
