Ingredients

For the base:

·         2 English muffins, split in half

·         1 tablespoon butter (optional, for toasting)

For the topping:

·         4 eggs

·         1/4 cup milk

·         Salt and pepper to taste

·         1/2 cup shredded cheddar cheese

·         1/4 cup cooked turkey bacon or chicken ham, chopped

·         1/4 cup diced bell peppers (optional)

·         1 tablespoon chopped green onions (optional)


Instructions

·         Preheat your oven to 375°F (190°C)

·         Lightly toast the English muffin halves in a toaster or in the oven for a few minutes to firm them up

·         In a bowl, whisk together the eggs, milk, salt, and pepper

·         Scramble the eggs in a skillet over medium heat until just set but still soft

·         Place the toasted English muffins on a baking sheet

·         Top each muffin half with scrambled eggs

·         Sprinkle shredded cheddar cheese over the eggs

·         Add chopped turkey bacon or chicken ham, and optional veggies like bell peppers and green onions

·         Bake in the preheated oven for about 8-10 minutes, or until the cheese is melted and bubbly
