Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef sausage (replace pork sausage with beef)
  • 1 small yellow onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1 cup water
  • 1 ½ pounds Yukon Gold potatoes, diced into ½-inch pieces
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 3 cups chopped kale
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the beef sausage and cook until browned, breaking it into pieces as it cooks.
  2. Add diced onion and cook for 3 to 4 minutes until softened. Stir in minced garlic and cook for another 30 seconds until fragrant.
  3. Pour in the chicken broth and water, then add the diced potatoes and Italian seasoning. Season with salt and pepper.
  4. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 10 to 12 minutes, or until potatoes are tender.
  5. Stir in chopped kale and cook for 3 to 5 minutes until wilted.
  6. Reduce the heat to low, then add heavy cream and Parmesan cheese. Stir until the cheese is melted and the soup is creamy.
  7. Taste and adjust seasoning if needed before serving.
